McLaren Chalke Update

Chad has the introductions that these guys gave on Friday night a week ago. You can go check them out there. I know that he is also working on getting a cohort meeting discussion that these guys were at up as well. All in all, it's pretty good stuff. Definitely a good springboard into new questions. Perhaps I will write a more reflective post after this week. Ministry conference is happening and I am swamped.

Taco Soup

Ok..ask and you shall receive. This might possibly be the easiest soup in the world to make. You can thank Dru for taking the time to type this out. Chalke and McLaren liked it so much that they wanted the recipe. I recommend this on a cold or rainy day. It's good stuff.

TACO SOUP

1 pound ground beef
1 can unsalted corn
1 can great northern beans
2 cans zesty tomatoes (with jalapeños, chilies, or rotel)
1 package dry taco seasoning mix
1 package dry Hidden Valley Ranch Dressing mix
1 cup water

Brown the ground beef and drain excess grease. Put into a large pot on stove top or 4 quart crock pot. Drain the juice from the corn, and rinse and drain the beans before adding to the pot. Pour in tomatoes, including the juice, and add both packages of seasonings. Add water and stir. Cook on high for 1 to 2 hours and on low for an additional 1 to 2 hours (maximum cooking time – 4 hours, minimum cooking time – 3 hours). Serve with shredded cheese and white tortilla chips. Recipe can easily be doubled and will fit in a 6 quart crock pot. It also tastes great re-heated for additional meals. Enjoy!

McLaren and Chalke Visit

It's been a while I know.

I work with the Continuing Education department here at Asbury. The job certainly has its down side. Doing all of the grunt work isn't always fun. I think this weekend may help it pay off though. Steve Chalke and Brian McLaren will be joining us on campus Friday night and all of Saturday. Dru and I are going to make Taco Soup for lunch on Saturday. This should be a good time.

Can't Get Going

Ok...It's been a while. I just can't seem to get going on the whole post thing. Mustoe and I talked briefly about the trendiness about blogging last night. That might be interesting to talk about,but frankly, I don't feel like it. Perhaps I use blogging as an excuse not to do what I should during the semester. (Trust me, I get all my work done. Two A's and a B+ have proved that.) Now that I have a lot more free time, I tend spending it playing a game or reading, but not writing. Hmmm...maybe my brain just needs a rest. I am still trying to post diligently at spitbox, but even that has become sort of a chore. I don't know. I need to splice all of the Christmas footage that I took...maybe I'll get that done in the next few weeks. In the mean time, hang in there, who knows when the slump will end.
